The default theme feels quite bland. How about installing something else? For example Kodular would look quite nice in Plasma Blue.
Breeze Themes for Discourse! is also an option but would require much more work.
To keep it simple, I would prefer for now to not deviate too much from the default of discourse and keep using the default theme.

I agree on this as it becomes a burden to maintain. I will also advice keeping the plugin use to minimum.
