If I install flatpak version of a package alongside the current one will it automatically inherit ALL existing settings, passwords etc so that I can safely remove the original package?

No. Flatpak store user’s settings in home/[username]/.var/app/[app_id].

No - but you can find the settings for the flatpak and it’s sometimes possible to just link the two together.
I did this with Transistor.
