Thank you for the suggestion for a workaround. We are actually ahead of you and have a working solution using Matplotlib and pyserial.
My son Victor stepped in and quickly wrote it in Python.
It works nicely, although there are still a few issues - which is probably to be expected at this early stage.

Given the weeks I have spent online searching for a solution, I find this rather impressive. And it finally lets me move forward with the original project, although there are other things in Labplot that would be very useful.
So I definitely hope that you can solve the remaining problems to get the streaming stuff working.
PS. Victor is pt. looking for new opportunities as programmer / UX developer or similar.
