Visually impaired user (low vision), casting my vote for EndeavourOS. For me it smoothened out some of the rough edges of pure Arch, and gave me the flexibility to define my own high-contrast themes depending on how my vision was on any particular day. Incredibly grateful to the Plasma dev team and all the contributors for making such a great toolset.

It sounds like you have the boot partition encrypted and GRUB has to wait for the UEFI to open it. Your boot partition does not need to be encrypted.
Also, if you use osprober, it has to wait for that to run.
