I want to select specific apps (like OBS) to be listed instead of selecting “Always” for every X11 apps!

To do this, we’d have to run a separate XWayland instance per app, rather than using a single global one. There are some definite upsides from this. Not only your idea, but also potentially per-app scaling.
However the downsides would be increased system resource usage and technical complexity — with the potential for more bugs.
