It’s not actually a color change, you are getting content previews from the PDFs themselves.
I believe you’re using foldre view on your desktop, so you can right click on your desktop, go to the “Icons” submenu then uncheck “Show previews”.
Words may vary, I’m using spanish so I’m guessing the names of the options but you should manage
