I want to see in real time the good old logs on screen in real time as it used to be. I mean the [OK] in green and [FAILED] in red with the description.
I can’t find the way, even what the dumb GPT tells me does not work.

Whether or not you see the boot/shutdown messages depends on how the Linux distribution you are using is configured, or how you have configured it. Hiding those messages is often referred as silent boot. So what you need to look for is how to bring back verbose boot by undoing those changes, see Silent boot - ArchWiki
