Was wondering if something like KIO-Dropbox would be possible? Similar to KIO-Gdrive or the more recent KIO-Onedrive.
Completely doable, someone “just” needs to implement it.
There are a couple of existing code implementation to see how it is done even to make it easier, and those wishing to implement can get help from KDE community devs.
This is generally the same answer for all cloud based storage services with a public API.
The nextcloud and owncloud integration go even further but are specific to dolphin rather to all KDE apps. Example: GitHub - owncloud/client-desktop-shell-integration-dolphin: 🖥️🐬

In “Configure Dolphin => Context Menu”, I have a Dropbox service selectable, but it does not play well with the Git service (Bug 483080)

I forgot we do have a plugin in dolphin-plugins package for dropbox.
I am aware of that plugin but it does not function the same way that the KIO workers do.
Yes it only integrates into dolphin to show you the synchronization state, but the files are on disk as regular files so a KIO protocol is not needed.
