Hello, I’m using KDE Plasma on Rock 5b, everything is fine, but since the last update, the desktop, window animations, and certain apps have slowed down.

Hi! Are you able to check what software was updated, and through what method - command-line package manager, Discover, operating system update - in the last update that you mentioned?
Can you also please double-check if you’re running Ubuntu 24.04, or a modified distribution provided by another project? I’m just checking because Ubuntu 24.04 didn’t ship with Plasma 6 or Qt 6, and your device appears to be running not just version 6 of each, but unreleased versions of KDE software (see Schedules/Frameworks - KDE Community Wiki and Schedules/Plasma 6 - KDE Community Wiki) and the Linux kernel - so you might be among the first folks who are trying out some situations and encountering associated issues 
Hmm - given the platform that you’re running on, it’s a bit surprising that you’d get pushed onto what’s essentially the testing branch of KDE Neon.
If you’ve intentionally setup your system in such a way, then I guess that’d be expected - but if you’re not intending to test pre-release software, it might be worth checking with your distribution maintainers about how to get back onto a more regular release schedule?
Overall system performance issues could come from a variety of sources, but it might be worth double-checking that you’re on the intended release schedule first before diving too deep into diagnosing
