No matter which icon pack I use, like Catppuccin, Papirus, or Tela, the main icons in my Start menu remain monochrome. This makes me think it’s not an icon pack issue, but a KDE setting, and I haven’t been able to find it.
I would like to have colored icons.

The Catppuccin docs appear to have screenshots for an older version of KDE Plasma, the menu sidebars have switched to monochrome symbolic icons by default very recently - the change applies at the icon name level so it affects all icon packs.
You can switch back to the coloured icons by using the KDE Menu Editor and manually changing the category entry icons.
