is there a way to set a default DNS server (wit IPv4 and IPv6), that will be used whatever wired or wireless new connection I create in NetworkManager?

I don’t think that can be done with the GUI settings. It might be doable with nmcli.
Alternatively, you could override the DNS settings in your modem/router and that should automatically apply to all machines connecting to it.

Not really a KDE topic; network management — especially bulk, automatic network management — is more of a sysadmin thing that happens in the layers underneath Plasma.
Perhaps Change DNS Settings using the NMCLI utility - Infotechys.com could help you. If not, try a web search for “nmcli set default DNS” and you might find something more helpful.
