Would be cool an option to empty the Trashcan with double click
This would be good to have.
You should open a ticket at https://bugs.kde.org/enter_bug.cgi?product=plasmashell so that it can be tracked.
Choose Trash Widget as Component and Wishlist as Severity.
You can also mention how would you like this functionality behave.

I guess most people would strongly prefer preserving the default action, i.e. single/double click to open, and avoiding a big confusion and disruption that this suggestion may cause.
However, it might be a good idea to let the users to optionally change that default action.
