I’m sure this is very niche. Any hints about where to find info to solve the quest myself would be as much appreciated as a solution … well maybe not quite as much 
Desired outcome: Open a spreadsheet I use all the time directly from the application launcher, as I hate having things on the desktop.
Environment: KDE Plasma 6 in an immutable distro (Bazzite). Office editor (OnlyOffice) installed via Flatpak so the menu entry config is odd and I can’t find references to help me with the commands it contains. I’m hoping what I need to do is duplicate this entry and append another command with the file path to open the file from this “shortcut” but perhaps that’s all wrong.
Any hints would be appreciated.
just replace all that @@u %U @@
with a path to the file.
opens right up to the document you specify in that path.
and change the icon to make it unique.

For what it’s worth, if you want to just quickly add that spreadsheet to your Favorites, you can also drag its icon from Dolphin, over top of the Application Launcher, then into your Favorites tab

@skyfishgoo, turns out your solution has some unintended consequences. Every time I open any spreadsheet in OnlyOffice, it now opens this spreadsheet as well and puts the new icon on the taskbar. If I open this spreadsheet from anywhere but the new menu entry, it opens two instances. So I’ve had to delete this menu entry and have marked @johnandmegh suggestion as the working solution.
