How do I enable virtual desktops for one display only?

You can add virtual desktops in KDE System Settings.

Thanks! all I see on the linked page is a screen shot from 2019. Apparently for an obsolete version of Plasma (?).

Can I remove virtual keyboard? Not sure why I need them if they break my physical keyboard.

Yes, you can remove a virtual desktop pushing X at right there same dialog where you add virtual desktops.
